Mochi Waffles

This mochi waffle recipe was inspired by my friend Keeping It Relle. I made a few tweaks that made the batter green (pandan extract ftw!) and ended up with a slightly sweet and deliciously chewy mochi waffle!

A huge bonus about this mochi waffle recipe is the use of glutinous rice flour which somehow doesn’t have any gluten. Therefore this is safe for my gluten intolerant buddies!

I definitely recommend adding a spread when serving. I used a liliko’i butter from Kahuku Farms on O’ahu but I’d easily top it with a berry jam or even a nut butter.

Ingredients

  • 3/4 cup milk
  • 1 egg
  • 1/2 teaspoon vanilla extract (or 1/2 teaspoon pandan extract)
  • 2 tablespoons oil
  • 1 1/4 cup glutinous rice flour or mochiko
  • 1/4 cup sugar
  • 1 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Directions

1. In a large mixing bowl, whisk together egg and sugar.

2. Add milk, vanilla extract (or other flavored extract such as pandan), oil, salt, baking powder, and glutinous rice flour (or mochiko). Whisk until well combined.

3. Prepare your waffle iron by spraying with oil and begin heating. When the iron is done heating, pour on the batter and cook for 3-5 minutes or until desired “doneness” has been achieved.

4. When done cooking, remove and serve! Add some toppings such as fruits, jams, or spreads to enhance the experience!

Easy Mochi Waffles

These easy mochi waffles are crispy on the outside, and chewy on the inside. Have these mochi waffles for breakfast, lunch or as a snack!
Mochi waffles are gluten-free since the recipe uses glutinous rice flour.

  • ¾ cup milk
