Day 11 of Cookiemas 2025.

fully sugared verguny

These are called Verguny, and they’re Ukrainian Cookies. They’re also known as “Angel Wings”, I guess because of the shape?

When I looked at this recipe I thought it was very similar to those long Asian fried donuts. You know the ones you can eat with congee or soy milk? They’re called Youtiao.

This is a plain dough without any sugar in it, and the way I have to knead it and everything reminded me of just making bread basically. I wonder why they’re considered cookies?

But as I’m learning through COOKIEMAS there’s a toooon of different types of cookies from around the world!

The only sugar is the powdered sugar on top. I can see this also being good with chocolate syrup or a drizzle of lemon with the powdered sugar!

The ones I saw online were definitely more consistent in shape and size compared to mine HAH but these still taste amazing!

Step-by-step process

I followed the Verguny recipe on Recipe From Europe so head over there if you want to make it.

I do recommend slowly adding in the buttermilk because my dough ended up too soft. I had to add more flour. However, if you add the buttermilk in slowly, you can reach the proper texture easier.

I mixed all the ingredients together but if I were to do it again, I would save the buttermilk for last and add about 70% of it then add the rest in slowly until the dough reaches the proper texture

Roll out and portion the dough

Using a small knife, slice the center of each piece. Then take the pointed end and fold it through the hole and under.

Fry on both sides until you get a nice brown color.

Sprinkle with powdered sugar.

KitchenAid Stand Mixer

I absolutely LOVE my tilt head stand mixer. I can’t imagine baking without it.
