Day 4 of Cookiemas 2025 is Sagu Keju, a cookie made with tapioca (sago) flour and cream cheese! This one was recommended by a viewer and it immediately caught my interest.

For this one, I turned to What To Cook Today’s recipe for these cheesy morsels. You can find the detailed recipe on their website.
Growing up the Philippines, I would often have cheese in my sweets and desserts. From keso ice cream to ensaymada, this cookie reminds me of childhood. It is very dry which is similar to my favorite treat: puto seco.
All of this to say, I really enjoyed this cookie.

What To Cook Today has wonderful progress photos but I also am sharing mine so you can see my struggles.


First I cream the sugar and egg.

Then I add the dry ingredients.



At first I tried to use this press as it is supposed to be used by coating it with a little bit of corn starch but it still didn’t really work out.



My solution was to just use a cookie scooper and a plop a ball of dough in a cookie cutter then use the design parts of the mold and press it with my fingers. MUCH better.


Cookies turned out great!

Moon Cake Molds
These are the molds I used to shape the cookies. They are used for traditional mooncakes but they work great for cookies too!
