Day 10 of Cookiemas 2025.

A viewer has been suggesting this cookie since the last 3 years of cookiemas!
It was perfect timing because I went to my friend’s apartment and they had a community lemon tree that I picked some fruit from.
The special ingredients in this recipe require lemon and sour cream, which are gonna make a tangy and soft cookie. I was concerned by how much they were gonna spread because I didn’t need to chill the cookies and the dough was SO soft.
But it turned out to be ok!
While the cookies cooled down, I made a super simple icing. Just mix lemons and powdered sugar. Make sure to wait for the cookies to fully cool before icing.
THAT’S IT! Cookies in 30-40 minutes.
Step-by-Step Photos
Again, these cookies are super simple. Mix all the ingredients to make a batter and bake them. While baking, make an icing and when the cookies fully cool, slather on as much icing as you can handle!

Mix sugar, brown sugar, and butter. Then add egg.

Zest lemon and squeeze lemon juice.

Cookie dough should look like the left side and then use a cookie scooper to portion them out evenly.

This is what the cookies look like after baking

The icing is super simple, lemon zest, powdered sugar, and lemon juice

Slather it all on and you’re done!
Tools & Equipment
Ozeri Food Scale
Especially with baking, a food scale is extremely helpful as it measures weight, not volume, which is more accurate. You should use weight measurements if a recipe provides them.
KitchenAid Stand Mixer
I absolutely LOVE my tilt head stand mixer. I can’t imagine baking without it.
Cookie Scooper (Vollrath #30 – 1 ounce)
The black Vollratch #30 has 1 ounce capacity. It is the perfect size for these cookies.
