White Chocolate Macadamia Nut Cookies (Day 10 of Cookiemas)

and a choc chip walnut cookie ♪

A careful observer would notice this is the same recipe as Day 1 of Cookiemas: Chocolate Chip Walnut Cookie but just swapping the chocolate chips for white chocolate and the walnuts for macadamia nuts.

Ingredients

  • 191.5g (1 1/2 cups) bread flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 113g (1/2 cup) butter, browned butter will make it taste better!
  • 130g (1/2 cup) brown sugar
  • egg
  • 100g (3/4 cup) white chocolate chips
  • 50g (1/2 cup) unsalted macadamia nuts
  • furikake for garnish

Directions

1. In a large mixing bowl, combine butter and brown sugar until a uniform paste is achieved. I suggest cutting the butter into smaller pads to make mixing easier. Next, add the egg and mix again until uniform. If you have brown butter (like I did) use it to make these cookies taste better!

2. Add the flourbaking powderbaking soda and salt. Mix until a cookie dough is formed. Finally, add the white chocolate chips and macadamia nuts and mix until evenly distributed.

3. Shape and place on a baking sheet lined with plastic wrap. Chill in the fridge for 30 minutes.

4. Preheat oven to 350°F. Remove cookies from fridge and place on a baking sheet lines with parchment paper. Sprinkle with furikake

5. Bake in 350°F oven for 12 – 15 minutes. If cookie dough is frozen, bake for 18 – 20 minutes.
