♪ On the eleventh day of Cookiemas, I made for you to eat:
coffee speculoos, furikake mac nut, 9 vanillekipferl, 8 ate‘s cookies, 7 madeleines, 6 almond cookies,
4 Alfajores, calamansi crinkles, ube coconuts
and a choc chip walnut cookie ♪
Yet another of my infamous cookies from back when I sold them.

This cookie recipe includes the extremely popular speculoos flavors that have become wildly popular in my area of the world.
Usually I would make these in a classic cookie form but this time I decided to make them into bars and add a special topping.
I crushed some speculoos cookies (popular brand would be Biscoff) and mixed it into the speculoos butter to give it a sweet crunch.
Be careful! These cookies are very decadent and pair well with a strong bitter coffee.
Ingredients
- 2 1/4 cups (270g) all purpose flour
- 1 teaspoon baking soda
- 1 tablespoon corn starch
- 1 teaspoon salt
- 3/4 cup (170g) unsalted butter, melted
- 1 cup (200g) light brown sugar
- 2/3 cup (133g) granulated sugar
- 2 eggs
- 1 tablespoon vanilla extract
- 2 tablespoons instant coffee
- speculoos butter to spread on top
- speculoos cookies for garnish
Directions
1. In a medium bowl, melt butter. add vanilla extract and instant coffee. Mix until evenly combined but not too much as to aerate the butter.

2. Next add these content to a large bowl. Add the brown sugar and granulated sugar. Mix. Add the eggs and beat until well mixed.
3. Finally add the dry ingredients: flour, baking soda, corn starch, and salt. Mix well until a cookie dough is formed.

4. Preheat oven to 350°F. Line a square baking dish with parchment paper and place the dough. Spread it out with a spatula.

5. Bake in the oven for 30-35 minutes or until an inserted toothpick does not lift any dough.
6. Remove and let cool. In a small bowl mix speculoos butter with crushed speculoos cookies. Spread this on top the cookie bars. Slice and serve!
