Chocolate Chip Walnut Cookie (Day 1 of Cookiemas)

♪ On the first day of Cookiemas, I made for you to eat

A choc’ chip walnut cookie ♪

Who doesn’t love chocolate chip cookies? I added walnuts!

This chocolate chip walnut cookie recipe is pretty simple. Long ago I developed a Levain Bakery clone recipe. I used that to make this classic cookie.

Stay tuned over the next 12 days for more cookie recipes!

Ingredients

I highly recommend you use weight for measuring these ingredients. I’ve provided the volume approximations for ease of use but using weight is much more precise. I cannot guarantee the quality of the cookie if you use volume measurements.

  • 191.5g (1 1/2 cups) bread flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 113g (1/2 cup) butter
  • 130g (1/2 cup) brown sugar
  • 1 egg
  • 100g (3/4 cup) chocolate chips. I like half dark, half semi sweet. (affiliate links)
  • 50g (1/2 cup) toasted walnuts or roasted in an air fryer

Directions

1. In a large mixing bowl, combine butter and brown sugar until a uniform paste is achieved. I suggest cutting the butter into smaller pads to make mixing easier. Next, add the egg and mix again until uniform.

2. Add the flour, baking powder, baking soda and salt. Mix until a cookie dough is formed. Finally, add the chocolate chips and walnuts and mix until evenly distributed.

3. Shape and place on a baking sheet lined with plastic wrap. Chill in the fridge for 30 minutes.

4. Preheat oven to 350°F. Remove cookies from fridge and place on a baking sheet lines with parchment paper.

5. Bake in 350°F oven for 12 – 15 minutes. If cookie dough is frozen, bake for 18 – 20 minutes.
