Hear me out: Spam. In a Cookie.

Do I dare? Yes I did! To be honest, it turned out super tasty!

The Spam adds the saltiness desired in any cookie without overpowering the sweetness of the dough.
I used the No-chill Small-batch Chocolate Chip Cookies Recipe from Baking Mischief as a base so expect this Spam Cookie Recipe to yield a small batch.

Ingredients
- 2/3 cup all-purpose flour (80g)
- 1/4 teaspoon baking soda
- 1/8 teaspoon salt
- 1/4 cup butter (2oz) melted and cooled
- 1/3 cup brown sugar (66g)
- 2 tablespoons granulated sugar (25g)
- 1/2 teaspoon vanilla extract
- 1 large egg yolk
- 1/2 cup Spam about 2 slices. cubed.
Directions
1. Preheat oven to 350º F. Line a baking sheet with parchment paper
2. In a small bowl, mix together flour, baking soda, and salt.

3. In a separate medium bowl, whisk together egg, butter, brown sugar, and granulated sugar. Add the vanilla extract and continue mixing until well combined. Finally, add the flour mixture and fold until a uniform color.
4. Slice and cube the Spam. Then in a small pan, pan fry the cubed Spam to give it a nice fry color on the outside.
5. Set aside a small amount of cubed Spam to be used as a topping for the cookies. Fold the rest of the Spam into the cookie dough.
6. Drop cookie dough balls onto the paper-lined baking pan. Then top with a few cubes of Spam per cookie

7. Bake for 9 to 12 minutes until desired cookie consistency is achieved. Cool and serve!
