Vegan Musubi

When I want to make something for my vegan friends, I often find myself scrambling. Luckily, since I’ve been doing musubi recipes lately, this Vegan Tofu Musubi recipe was pretty easy to whip up.

I took inspiration from Spam Musubi and substituted tofu for Spam. You pretty much prepare it in the same way as Spam with the soy sauce & sugar mixture for flavor.

I had heard about this new vegan egg alternative made by a brand called Just Egg. This was the first time trying it and boy was I pleasantly surprised! I don’t know how they do it but I really couldn’t tell the difference when the musubi was assembled. I did try it on its own and its easy to tell its not real egg but when part of a larger dish, Just Egg really is just another egg.

Ingredients

  • 1 box of firm tofu
  • 1 jar of plant-based vegan egg alternative. I used Just Egg.
  • 3 cups rice. short grain. sushi-grade if available. cooked.
  • 6 half-sheets nori
  • 1/2 cup soy sauce
  • 1/2 cup orgainc cane sugar (vegan)
  • furikake

Directions

0. Cook your rice. Use short-grain sushi rice.

1. Slice the the tofu into pieces that will fit into your musubi mold. In a sauce pan, add a little bit of oil and fry the tofu til it browns and forms a nice skin. Repeat for all slices of tofu.

2. In the same sauce pan, add soy sauce and sugar. Fry until the tofu has soaked up some soy sauce and turned brown.

2. In a pan fry up the vegan egg alternative. Treat this like a regular egg and fry it up. You will have to slice it to fit in the musubi mold.

3. Assemble! I recommend the following order: tofu, egg, furikake, then rice
