AHHH TRADER JOE’S RELEASED AN UBE MOCHI PANCAKE MIX!!! AHH!!!
I absolutely love Trader Joe’s, but I want you to know that you can make this at home, especially if you already have glutinous rice (aka sweet rice flour, or mochiko flour).
The Trader Joe’s mix is gluten-free, and you can convert my recipe to a gluten-free ube mochi pancake by substituting the all-purpose flour for normal rice flour.
The best part is, you can change the flavor of these ube mochi pancakes to be…pandan mochi pancakes, vanilla mochi pancakes, or WHATEVER flavor you want them to be!
Oh wait…the BEST best part is that making this at home is a fraction of the cost compared to buying the mix at Trader Joe’s.
Place this batter in a waffle iron to turn these into ube mochi waffles!
