Ube Churros (Ube Recipe 9)

Purple Churros! It seems like most of the entries in this series end up using ube mostly for color and not taste.

Still, this recipe turned out really good! Churros are really straightforward. Just a simple fried dough!

I did make an ube dip that’s just ube halaya and milk mixed together to taste.

I used All Recipe’s Churros Recipe (link) but added ube extract.

Ingredients

  • 1 cup water
  • 2 1/2 tablespoons sugar
  • 1/2 teaspoon salt
  • 2 tablespoons vegetable oil
  • 1 cup all-purpose flour
  • 1/2 teaspoon ube extract
  • oil for deep frying
  • 1/2 cup sugar
  • 1 teaspoon ground cinnamon

For the optional dip:

  • ube halaya
  • whole milk

Directions

1. In a medium sauce pan, pour water, 2 1/2 tablespoons sugar, salt, ube extract, and vegetable oil. Bring to a boil and then remove from heat. Stir in flour until mixture forms a dough ball

2. Heat oil for deep frying to 375°F

3. Transfer dough into a piping bag fitted with a medium star tip. Pipe 4-6 inches of dough straight into the hot oil. Do not overcrowd the fryer. Its a little difficult to see the deep purple dough turn brown so use your best judgment. Remove from oil and let churros dry on paper towels.

4. In bowl or on a plate, combine 1/2 cup sugar and cinnamon. Roll the churros in this mixture

5. If you want to make the optional dip, add ube halaya into a small bowl and slowly add milk as you mix to get the consistency you want.
