Matcha Butter Mochi

Butter Mochi is traditionally a Hawaiian dessert staple. Doug has had it since he was a kid in all types of flavors.

I thought matcha would be an easy flavor since chocolate is such a common flavor. I’ve not seen it but I’m sure it has been done before.

The recipe is pretty simple. Just add matcha powder to a basic butter mochi recipe!

Ingredients

  • 300g (3 cups) glutinous rice flour
  • 2 tablespoons matcha powder
  • 1 1/2 teaspoon baking powder
  • a pinch of salt
  • 3 eggs
  • 200g (1 cup) sugar
  • 1/4 cup butter, melted
  • 1 1/2 cup milk or any alternative milk
  • 1 teaspoon vanilla extract

Directions

1. Preheat the oven to 350F (175C). Line an 8×8 baking pan with parchment paper (or grease with oil or butter)

2. In a large bowl, combine glutinous rice flour, matcha, baking powder, and salt. Whisk well.

3. In a separate bowl, combine eggs and sugar. Whisk well until combined. Add the butter, milk, and vanilla extract and mix well.

4. Pour the wet ingredients into the dry ingredients and mix until fully incorporated.

5. Pour the batter into the prepared baking pan and bake in the middle rack of the oven for 60 minutes or until a toothpick inserted comes out clean.

6. Remove the butter mochi from the oven and allow to cool for 15 minutes. Slice and enjoy while fresh!
