Chocolate Chip Walnut Cookies with a Secret Ingredient

Ok ok, bear with me on this SECRET INGREDIENT.

In the Philippines we have a dried anchovy we call dilis. Here, I’ve used it as a topping to a gorgeous chocolate chip walnut cookie. It adds a bit of saltiness like flaky salt as well as an extra crispy texture.

PLEASE don’t knock it before you try it!

Ingredients

  • 191.5 grams bread flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 113 grams butter
  • 130 grams brown sugar
  • 1 egg
  • 100 grams chocolate chips
  • 50 grams walnuts
  • crispy fried anchovies or baby sardines to garnish

Directions

1. Preheat oven to 350ºF. Using a stand mixer or hand mixer, combine butter, brown sugar, and egg. Once thoroughly mixed, add the bread flour, baking powder, baking soda, and salt.

2. Once this mixture is fully combined, add chocolate chips and walnuts!

3. Form dough into cookie shapes and place on a parchment paper lined baking sheet.

4. Bake in the preheated oven for 12 to 15 minutes.

5. When done baking, remove from heat and top with the anchovies or sardines. Let cool and enjoy!
