Chocolate Butter Mochi

Butter mochi is a popular Hawaiian dessert. This simple chocolate butter mochi recipe is bouncier than your typical brownie or cake. It’s loaded with dark chocolate flavor!

Ingredients

  • 1 1/2 cup (150g) glutinous rice flour
  • 3/4 cup (80g) dutch cocoa powder
  • 1 1/2 teaspoon baking powder
  • a pinch of salt
  • 3 eggs
  • 1 cup (200g) sugar
  • 1/4 cup butter, melted
  • 1 1/2 cup full fat coconut milk
  • 1 teaspoon vanilla extract
  • chocolate chunks or chocolate chips to taste

Directions

1. Preheat the oven to 375F (190C). In a large bowl, sift together glutinous rice flour, dutch cocoa powder, baking powder, and salt. Mix to combine.

2. In a separate bowl, whisk together eggs, melted butter, and sugar until combined. Add the coconut milk and vanilla extract and mix.

3. Pour the liquid mixture into the dry mixture and mix until fully combined.

4. Grease a 9×9 baking dish (or line with parchment paper/banana leaves). Pour the batter into the baking dish and top with chocolate chunks or chocolate chips.

5. Bake in the middle rack of the preheated oven for 60 minutes or until a toothpick inserted comes out clean.

6. Remove from the oven and allow to cool for 20 minutes before serving.
