Ginataang Bilo Bilo

Ginataan is a general term for any Filipino dish that uses coconut milk as a base. There are so many dishes such as ginataang mais, ginataang munggo, ginataang langka, and more! You can find a long list on the Wikipedia page.

You can find instructions for bilo bilo on my recipe page here. The bilo bilo I made for this dish was ube and plain. In my bilo bilo recipe you’ll get instructions for pandan flavored. Just substitute the pandan extract for ube extract if you want purple bilo bilo or remove the extract entirely to have plain, white bilo bilo.

Ginataan dishes can be sweet or savory. This specific dish is Ginataang Bilo Bilo, a sweet, almost dessert-like, Here, I’ve added the mainstays of jackfruit (langka) and saba banana. I’ve also added cassava aka yuca root but didn’t have any sweet potato on hand so feel free to substitute sweet potato for the cassava or even just have both!

This recipe I made sure to be not too sweet. Feel free to add or remove sugar to your taste. I enjoy this one not too sweet so that I can taste the individual ingredients.

Ingredients

  • 2 cans full fat coconut milk (13.66 oz per can)
  • 1 cup water
  • 1/4 cup + 1 tablespoon sugar
  • pinch of salt
  • 1 can ripe jackfruit
  • 4 saba bananas
  • 1 medium cassava aka yuca. Can substitute with sweet potato

Directions

1. Make the bilo bilo following my recipe. Substitute the pandan extract for ube extract if you want purple bilo bilo or remove the extract entirely to have plain, white bilo bilo.

2. Slice the jackfruit, bananas, and cassava

3. In a large pot, mix together the water, coconut milk, sugar, and salt. Bring to a simmer over medium heat.

4. Once it begins to simmer, add the cassava and simmer until soft, about 10-15 minutes.

5. Add the saba banana and jackfruit. Let it return to a simmer and finally add the bilo bilo.

6. When all contents are hot throughout, remove from heat. Let cool and serve!

Instructions

  • Slice the jackfruit, bananas, and cassava
  • In a large pot, mix together the watercoconut milksugar, and salt. Bring to a simmer over medium heat.
  • Once it begins to simmer, add the cassava and simmer until soft, about 10-15 minutes.
  • Add the saba banana and jackfruit. Let it return to a simmer and finally add the bilo bilo.
  • When all contents are hot throughout, remove from heat. Let cool and serve!
