Savory French Toast (Day 13 of Bread Challenge)

Savory French Toast is a great twist on a breakfast classic. While not groundbreaking, this savory french toast recipe introduces the new (to me) possibility that all french toasts do not have to be sweet!

While staying in Bath, UK, Doug and I were lucky enough to try a savory french toast from a breakfast cafe. This inspired me to to try making it at home. This recipe is the result of my early morning quick improvisation.

In this savory french toast recipe, you’ll find relatively basic and standard ingredients. I used the bacon grease as much as possible because it makes everything taste good. One ingredient I would recommend adding is cherry tomatoes. Having a bit of acid cut through the grease would be welcome.

Ingredients

For 1 slice of French Toast

  • 1 slice of bread, old or stale works best
  • 2 slices of bacon, streaky or belly variant
  • 2 mushrooms, crimini or white button
  • 2 eggs, for dredging
  • 1/2 stalk green onion, sliced for garnish
  • cheddar cheese, finely grated
  • cooking oil, in case your pan needs extra
  • salt & pepper, to taste

Directions

1. In a pan, fry bacon slices. When done, put aside but keep the bacon grease in the pan

2. Finely dice mushrooms.

3. In a bowl, scramble eggs. Salt and pepper the scramble to taste.

4. Dredge the bread in the scrambled eggs on both sides.

5. Place the egg-soaked bread in the frying pan. Spread some green onions on top.

6. Flip the bread to cook the other side. Add grated cheddar cheese and more green onions.

7. When done frying remove bread from the pan.

8. Sauté the mushrooms in the same pan. If needed, add a bit of oil.

9. When mushrooms are done cooking, place them on top the toast. Add the bacon on top.

10. Enjoy!
