Ube Noodles (Ube Series 5)

This Ube Noodles recipe is just for making the noodles. You’ll have to provide your own sauce and protein but I think it would go well with any sauce!

I used ube powder that I was able to find frozen at my Filipino grocery store. It doesn’t really add too much flavor but makes the noodles a beautiful purple color.

I think it gives the pasta a bit more of an al dente texture but its hard to tell as I’ve only made pasta twice.

I adapted this recipe from Minimalist Baker’s Homemade Pumpkin Pasta recipe.

Ingredients

  • 2 cups all-purpose flour
  • 1/4 teaspoon sea or kosher salt
  • 1 large egg
  • 2 egg yolks
  • 3 tablespoons ube powder, defrosted from frozen
  • 1/2 teaspoon ube extract
  • water

Directions

1. In a stand mixer’s bowl, add the ube powder, egg, egg yolks and ube extract. Mix using the dough hook attachment. Then add the flour and salt and mix some more. If needed, drizzle small amounts of water until a nice dough is formed.

2. I’d recommend slicing the dough into 4 parts and shaping into balls. Dust with flour and cover with plastic and let it sit for 30 minutes.

3. Shape your pasta! I use the convenient pasta attachments for my stand mixer but you could also shape & cut by hand.

4. Bring a pot of water to boil and add some salt. Boil the fresh noodles for just 1 to 2 minutes.

5. Drain and top with your favorite sauce!
