I’m so happy this one came up. I LOVE sinigang. You can find this recipe of mine without SPAM but I figured might as well put this up here too.

For sinigang mix, I used what I could find at my local Asian supermarket. It calls for 2 liters of water (~8 cups) but I adjust to 1.5 liters (6 cups) because I like mine more sour.

I really enjoyed this one and ate all of it up over the course of the next couple days. It didn’t last long!
Ingredients
- one can of SPAM cubed
- one daikon sliced into rounds
- one large tomato
- 2 yellow chili peppers
- a few heads of baby bok choy
- 1 packet of sinigang mix
- 1 onion
- 6 cups water adjust to taste
Directions
1. Slice the SPAM, tomatoes and onions into large cubes. Slice the daikon into rounds. Remove the roots from the bok choy.

2. In a large pot, bring your water to a boil. Add the tomato and onions. Let simmer for 5 minutes.
3. Add sinigang seasoning, daikon, SPAM, and whole yellow chili pepper. Let simmer until daikon is soft to your liking about 15 minutes

4. Finally, add the bok choy and once those are cooked, your meal is ready!

5. Serve with rice and enjoy!
