Medenki (Bulgarian Honey Cookies)

Medenki are Bulgarian Honey Cookies. The flavors of this cookie come from cinnamon, honey, and the chocolate coatings.

These cookies are more cake like in texture and make lots of crumbs with each bite. You’ll love these if you like scones!

How Do You Make Medenki?

Medenki is easily made like most other cookies: mix wet ingredients, add dry ingredients, chill, then bake! The added step of melting chocolate and coating the cookies is a must!

Mix together the wet ingredients. This includes honey, vanilla sugar, and oil.

Sift dry ingredients together and then add to the wet ingredients

Shape your cookies and chill in the refrigerator

While the cookies are baking you can begin making the chocolate dips by melting semi-sweet and white chocolate chips separately with 1 tablespoon of oil each

When the cookie are done baking and your chocolates are melted, dip the cookies halfway

When the chocolate has solidified on the cookies, commence eating!

Medenki (Bulgarian Honey Cookies)

Holiday cookies from Bulgaria! Spiced with cinnamon and sweetened with honey, these cookies are crumbly and great with coffee or tea.

Ingredients
  

  • 2 large eggs
  • 1 cup (120g) powdered sugar sifted
  • ¼ cup (85g) honey
  • 1 teaspoon vanilla extract
  • cup (147g) vegetable oil or avocado oil
  • 4 cup (480g) all-purpose flour
  • ¼ teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking soda
  • 1 cup (170g) milk chocolate chips
  • 1 cup (170g) white chocolate chips
  • 2 teaspoons vegetable oil or avocado oil

Method
 

  1. I recommend using a stand mixer for this recipe but it is optional.
  2. In a large bowl, beat together the eggs and powdered sugar. When they are well combined, add the vanilla extract and honey. Mix this until combined and finally add the oil. If you're using a stand mixer, use the paddle attachement.
  3. In a separate bowl sift together the all-purpose flour, salt, cinnamon and baking soda.
  4. Add the dry ingredients to the mixing bowl that holds the wet ingredients and mix until it become a dough.
  5. Next shape your cookies and place on a dish that will go in to the refrigerator. I used a cookie scooper and placed on a small baking tray lined with plastic wrap.
  6. Chill the shaped dough for at least 30 minutes
  7. Preheat the oven to 350℉. Then place the dough balls on a baking tray lined with parchment paper. Be sure to give them space so they don't touch each other while baking
  8. Bake in the 350℉ oven for 12-15 minutes or until the cookies are golden brown.
  9. While the cookies are baking, make the chocolate dips by melting each chocolate separately with a tablespoon of oil each. Use medium-low heat so you don't burn or boil the chocolate.
  10. When the cookies are done baking remove from the oven and let them cool.
  11. Dip each cookie in a chocolate melt before the chocolate hardens
  12. Place the cookies on a wire rack with something underneath to catch the dripping chocolate
  13. Once the chocolate hardens, enjoy!
