Maslenki Recipe (Bulgarian Jam-Filled Cookie)

It seems like many European cultures have a cookie that looks like this: Austrian linzer, Danish butter cookie, etc. I would like to introduce the Bulgarian Maslenki!

It seems the biggest difference is the Maslenki uses lard instead of butter. I’m not sure if that is the only difference but I think it is a very tasty one!

What is Maslenki?

Maslenki is a simple holiday cookie made by smashing jam between two basic sugar cookies. Except instead of butter, you use lard in the cookie dough.

How Do You Make Maslenki Cookies?

Maslenki is a simple recipe. Make your dough by mixing the wet ingredients and then adding the dry. Shape them using cookie cutters and making holes in half. After baking, use some jam and stick the two different cookies together to create the Maslenki. Don’t forget to finish it off with a light dusting of powdered sugar!

Prepare you lard by warming it. Stir it so any chunks will melt. Then allow it to return to room temperature

Mix the wet ingredients together

Add in the dry ingredients slowly

Turn out and chill the dough before shaping

After chilling, roll out the dough and begin shaping using cookie cutters.

Bake the cookies. When they’ve cooled you can assemble.

Maslenki (Bulgarian Jam-Filled Cookie)

A familiar looking holiday cookie that uses lard instead of butter! (Butter can be used if you don't have lard)

Ingredients
  

  • 3 large eggs
  • ¾ cup (150g) granulated sugar
  • 2 teaspoons vanilla extract
  • 1 cup (205g) melted lard or unsalted butter cooled to room temperature.
  • 4 cups (480g) all-purpose flour
  • 1 teaspoon baking powder
  • 12 ounces fruit jam for filling. pick your favorite flavor!
  • powdered sugar for dusting

Method
 

  1. Prepare your lard. Heat it in the microwave for 10 seconds at a time. Remove after each round and stir. Your goal is to render the lard to be one smooth consistency as it often is bought from the store or scooped with uneven chunks. Once you can stir it into one consistency, set it aside to let it cool
  2. Using a stand mixer, beat the eggs and granulated sugar until a little foamy. Add the vanilla extract. Mix in the lard slowly making sure it is no longer warm.
  3. In a separate bowl mix the all-purpose flour and baking powder. Slowly add this to the wet mixture and continue mixing everything to create a dough.
  4. Turn out the dough onto a flat surface covered in plastic wrap and spread the dough out to about 1/2 inch thick. Wrap this all up in plastic wrap and chill in the refrigerator for at least 30 minutes. This will make rolling and shaping easier.
  5. Preheat oven to 350℉
  6. Dust a surface with flour and take your dough out of the chiller. Dust the dough with flour and dust a rolling pin. Roll the dough to about 1/8 inch thickness. Using a 2 ½ inch circle cutter, shape the cookies.
  7. Cut out a small hole in half the cookies using a fun shaped cookie cutter or freehand. Reuse the scraps to make more cookies!
  8. Place all the cookies on a baking sheet lined with parchment paper. Bake in a preheated oven at 350℉ for 7 to 8 minutes or until edges turn golden.
  9. Remove from the oven and let the cookies cool before filling
  10. Put a small dollop of jam on the full circle cookies and then press the cookies that have cutouts to fully assemble the cookie. Dust with powdered sugar to complete the Maslenki!
