Arroz Caldo is a Filipino chicken & rice porridge perfect for sick days or chilly weather! It is often the go to for meals when sick. In those cases, I add extra ginger to make my sick body feel better.
What is Arroz Caldo?
Arroz Caldo is simply the name my Filipino culture gives to our version of rice congee. It is traditionally made with chicken and ginger and is a healthy, hearty meal just like any other congee.
How Do You Make Arroz Caldo?

Making Arroz Caldo is pretty straightforward. Simply cook the chicken with the aromatics and then load up on chicken broth and rice and simmer until everything is done!
Cube your chicken. Brown it and add in aromatics and spices
Add rice, chicken broth, and fish sauce
Simmer for a while. Adjust to taste, then garnish and enjoy!

Method
- Cut your chicken into cubes. If there are bones, keep the bones for the soup.
- In a large pot, heat some oil. Toss in the chicken and begin to brown it. You don't need to cook the chicken all the way through at this stage.
- After the chicken is cooked on the outside, add the garlic, onions and ginger. Allow these aromatics to saute and develop. Add salt and pepper.
- Next, add the uncooked rice. Stir to mix well and then add the chicken broth. Here you can add more chicken broth or even just water to thin out the mixture
- Add the fish sauce. Cover and simmer for at least 45 minutes.
- At this point you can adjust all flavors to your taste. You can add more water or chicken broth or add more salt and pepper.
- I like to garnish the final plate with chopped cilantro, green onions and century egg but these are totally optional!
