Jackfruit Banana Bread (Day 22 of Bread Challenge)

Adding jackfruit to banana bread is an easy win! This jackfruit banana bread recipe yields a moist bread with a tropical twist!

I got the idea for a jackfruit banana bread recipe from a filipino snack: turon. Turon combines jackfruit and banana in a spring roll wrapper and is then deep fried. Adding jackfruit to banana bread is a no brainer.

Jackfruit and banana is such a classic Filipino flavor combo that many bakeries and stores carry jackfruit and banana flavored items. Even ice cream manufacturers in the Philippines make “Banana Langka” flavors (langka is what we call jackfruit in the Philippines!).

I used the banana bread recipe from Simply Recipe and added nuts and ripe jackfruit.

Ingredients

  • 2 to 3 very ripe bananas, peeled (about 1 1/4 to 1 1/2 cups mashed)
  • 1/3 cup (76g) butter, melted
  • 1/2 teaspoon baking soda
  • 1 pinch salt
  • 3/4 cup (150g) brown sugar
  • large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 1/2 cups (205g) all-purpose flour
  • 1 cup (112g) walnuts or mixed nuts, optional
  • 4 pieces yellow jackfruit meat, ripe. diced

Directions

1. Preheat oven to 350F (175C)

2. In a large mixing bowl, mash bananas into a paste that does not have any chunks. Add the melted butter and stir.

3. Mix in the baking soda, salt, sugar, beaten egg, vanilla extract, nuts, and diced jackfruit,. When this is mixed well, add the flour and mix again until uniform throughout.

4. Transfer the mixture to an oiled baking tin. I recommend a metal loaf tin.

5. Bake at 350F for 50 minutes to 1 hour. If you choose to bake your mixture in smaller forms, you can reduce the baking time.

6. When baking is finished, remove from the oven and let cool for a few minutes before slicing and serving. Banana jackfruit bread is best served warm!
