Blueberry & Chocolate Banana Bread

I recently made a video about what we ate in Hawaii on a recent trip to visit Doug’s family including his adorable nieces. One night after dinner, Uncle Eddie made banana bread with the help of Jojo, Doug’s youngest niece. She chose to add blueberries and chocolate chips to the base banana bread recipe and it turned out SO GOOD. Many people commented asking for the recipe so I’ve provided it here!

The recipe is from the Maryknoll School 75th Anniversary Cookbook. This is one of those church community cookbooks that compiles recipes from their members or attendees. Our specific recipe is titled Banana Bread #2 which was submitted by Christian Bradley.

The thing I love most about these cookbooks is that they’ll provide multiple recipes of the same dish from different submissions.

Process

Banana bread recipes are popular because they are easy and this is no exception.

First, mix the dry ingredients.

Then mash the bananas and add sugar and wet ingredients

Mix the banana mash and the dry ingredients

When adding the blueberries, be sure to fold them in so as not to crush them especially when not using frozen blueberries.

Banana Bread with Blueberries and Chocolate Chips

Simple banana bread with added blueberries and chocolate for the inner child.
Prep Time 30 minutes
Cook Time 1 hour 15 minutes
Total Time 1 hour

Ingredients
  

  • 2 cups flour
  • 2 teaspoons cinnamon
  • 2 teaspoons baking soda
  • ½ teaspoon salt
  • 300 grams (1 ½ cups) sugar
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 130 grams avocado oil or salad oil
  • 250 grams banana approx 2 cups when sliced. 1 medium banana = 1 cup sliced.
  • 170 grams (1 cup) chocolate chips I use a mix of semi sweet and dark chocolate chips
  • 140 grams (1 cup) frozen blueberries

Equipment

  • bread tins of any shape

Method
 

  1. In a bowl, mix dry ingredient: flour, cinnamon, baking soda, salt, and sugar.
  2. Add eggs, vanilla and salad oil.
  3. Mash bananas and add them to the mixture
  4. Add chocolate chips and blueberries. If you use fresh blueberries, be gentle wen folding into the batter so they do not smash
  5. Preheat oven to 350℉.
  6. Pour into bread tins and let sit for 20 minutes.
  7. Bake at 350℉ for 1 hour and 15 minutes. Adjust time as necessary. The original recipe called for 45 minutes but mine took 1 hour and 30 minutes. Insert a toothpick into the bread and if it comes out clean then it is ready.
  8. Let it cool before serving. I suggest trying it with some greek yogurt!
