I used this custard when I made cornets for Mother’s Day. You can substitute this for chocolate custard in my Chocolate Cornet recipe.

Is Custard Lactose-Free?
A classic, typical custard uses milk or heavy cream and therefore, NOT lactose free. However, you can use coconut milk as a substitute to make it lactose free. However, since coconut milk has different fat content than dairy milk, the consistency will be different. It doesn’t ruin it, it just isn’t quite as creamy as dairy custard.

The process of making lactose-free custard isn’t really any different than dairy custard. You’ll heat most of the ingredients while stirring. Then add the coconut oil after removing from heat and stir!

Purple Lactose-Free Custard

Method
- In a medium saucepan, combine milk and ⅛ cup sugar. Place over medium-low heat until mixture comes to a simmer.
- In a medium bowl, whisk together egg yolks, cornstarch, and remaining sugar.
- Add both the ube extracts. Stir until color is uniform throughout. The colored one will give the mixture its purple color while the colorless one will give it a boost of ube flavoring. You can use all colored extract if you wish.
- Remove from the heat and whisk in the coconut oil. Pass the mixture through a sieve to remove any lumps.
