Juice calamansi and mince the rind.
Cream butter, cream cheese, and 1 cup of sugar together until well combined
Add in the egg and beat until combined.
Add in minced calamansi and juice, mixing until combined.
Next, add in salt, flour, cornstarch and baking soda. Mix until all ingredients are well combined.
Preheat oven to 350°F Chill the dough for about 15 minutes in the fridge before scooping.
Roll the rounds of dough in more granulated sugar and then roll in powdered sugar
Place on a parchment paper lined baking sheet and bake at 350°F for 12-13 minutes.
Allow to cool and enjoy!
