butter
softened

cream cheese
softened

granulated sugar
plus more for coating

egg

tablespoons
calamansi rind
minced

tablespoons
calamansi juice

teaspoon
salt

cups
all purpose flour
2
teaspoons
cornstarch
½
teaspoons
baking soda

powdered sugar
Instructions
Juice
calamansi
and mince the
rind
.
Cream
butter
,
cream cheese
, and 1 cup of
sugar
together until well combined
Add in the
egg
and beat until combined.
Add in
minced calamansi
and
juice
, mixing until combined.
Next, add in
salt
,
flour
,
cornstarch
and
baking soda
. Mix until all ingredients are well combined.
Preheat oven to
350°F
Chill the dough for about
15 minutes
in the fridge before scooping.
Roll the rounds of dough in more
granulated sugar
and then roll in
powdered sugar
Place on a parchment paper lined baking sheet and bake at 350°F for
12-13 minutes
.
