Cream Cheese Calamansi Cookies

Ingredients
  

  • ¼ cup butter softened
  • ¼ cup cream cheese softened
  • 1 cup granulated sugar plus more for coating
  • 1 egg
  • 3 tablespoons calamansi rind minced
  • 3 tablespoons calamansi juice
  • ½ teaspoon salt
  • 2 cups all purpose flour
  • 2 teaspoons cornstarch
  • ½ teaspoons baking soda
  • cup powdered sugar

Instructions
 

  • Juice calamansi and mince the rind.
  • Cream buttercream cheese, and 1 cup of sugar together until well combined
  • Add in the egg and beat until combined.
  • Add in minced calamansi and juice, mixing until combined.
  • Next, add in saltflourcornstarch and baking soda. Mix until all ingredients are well combined.
  • Preheat oven to 350°F Chill the dough for about 15 minutes in the fridge before scooping.
  • Roll the rounds of dough in more granulated sugar and then roll in powdered sugar
  • Place on a parchment paper lined baking sheet and bake at 350°F for 12-13 minutes.
  • Allow to cool and enjoy!
