Peanut Stuffed Sticky Rice (Filipino Masi)

These sweet rice balls are stuffed with brown sugar and crushed peanuts. It’s SUPER quick and easy to make. Boil for a few minutes, and it’s cooked when it floats!

Ingredients

  • 1 cup glutinous rice flour
  • 2 tablespoons brown sugar
  • 2 tablespoons peanuts finely crushed
  • ½ cup water hot

Instructions

  • In a bowl, mix together the brown sugar and peanuts.
  • In a separate bowl, combine the glutinous rice flour and water. Use chopsticks to bring the dough together, then knead with your hands until a smooth ball forms.
  • Grab about a couple tablespoons of dough and flatten into a circle. Curl your hands so the dough forms a cup, and pour in some of the peanut and sugar mixture.
  • Pinch and seal the dough, and roll it into a smooth ball. Place it on a plastic-wrap lined plate, and repeat until you’ve used up all the dough.
  • In a medium bowl, boil enough water to cover the rice balls. Add the rice balls and wait until they float (I like to leave them in there for a few more minutes afterwards).
  • Remove the rice balls from the water, and enjoy while hot!
