In a medium bowl, whisk together egg, milk, ube extract, cinnamon, and salt.
Take one slice of bread and dredge ONE side in the egg mixture. On the other side of this slice, spread 1 tablespoon of ube jam.
Dredge both sides of the other slice of bread in the egg mixture.
Sandwich the two slices with the ube jam in the middle.
Place the sandwich in an oiled and hot waffle iron. Cook for about 5 minutes or until a nice golden brown crust has formed
Remove from waffle iron and slice into sticks about one inch thick.
Serve with ube jam for dipping and enjoy!
