Ube French Toast Waffle

Ingredients
  

  • 2 slices sandwich bread
  • 1 egg
  • cup milk
  • teaspoon ube extract
  • ¼ teaspoon cinnamon
  • 1 pinch of salt
  • 1 tablespoon + more for dipping ube jam

Instructions
 

  • In a medium bowl, whisk together eggmilkube extractcinnamon, and salt.
  • Take one slice of bread and dredge ONE side in the egg mixture. On the other side of this slice, spread 1 tablespoon of ube jam.
  • Dredge both sides of the other slice of bread in the egg mixture.
  • Sandwich the two slices with the ube jam in the middle.
  • Place the sandwich in an oiled and hot waffle iron. Cook for about 5 minutes or until a nice golden brown crust has formed
  • Remove from waffle iron and slice into sticks about one inch thick.
  • Serve with ube jam for dipping and enjoy!
