Easy Mochi Waffles

These easy mochi waffles are crispy on the outside, and chewy on the inside. Have these mochi waffles for breakfast, lunch or as a snack!
Mochi waffles are gluten-free since the recipe uses glutinous rice flour.

Ingredients
  

  • ¾ cup milk
  • 1 egg
  • ½ teaspoon vanilla extract (or pandan extract)
  • 2 tablespoons oil
  • 1 ¼ cup glutinous rice flour or mochiko
  • ¼ cup sugar
  • 1 ½ teaspoon baking powder
  • ¼ teaspoon salt

Instructions
 

  • In a large mixing bowl, whisk together egg and sugar.
  • Add milkvanilla extract (or other flavored extract such as pandan), oilsaltbaking powder, and glutinous rice flour (or mochiko). Whisk until well combined.
  • Prepare your waffle iron by spraying with oil and begin heating. When the iron is done heating, pour on the batter and cook for 3-5 minutes or until desired “doneness” has been achieved.
  • When done cooking, remove and serve! Add some toppings such as fruits, jams, or spreads to enhance the experience!
