Easy Ube Pie
A purple version of a common pumpkin pie! Use this to surprise your guests with a visually stunning but more importantly a delicious dessert!

- 16 ounces frozen grated ube (purple yam) defrosted
- 1 can (14oz) condensed milk
- 2 large eggs
- 1 tablespoon pumpkin pie spice
- ½ teaspoon salt
- 1 teaspoon ube extract for color
- 1 parbaked pie crust
Preheat oven to 375°F.
Mix together grated ube, condensed milk, and eggs. When well mixed, add pumpkin pie spice, salt, and a dash of ube extract for color. Feel free to add the ube extract slowly until you reach your desired color.
Pour the mixture into your par-baked pie crust and place in oven. Bake for 55-60 minutes
Remove from oven and let cool. Serve and enjoy!
