Easy Ube Pie

A purple version of a common pumpkin pie! Use this to surprise your guests with a visually stunning but more importantly a delicious dessert!

Ingredients
  

  • 16 ounces frozen grated ube (purple yam) defrosted
  • 1 can (14oz) condensed milk
  • 2 large eggs
  • 1 tablespoon pumpkin pie spice
  • ½ teaspoon salt
  • 1 teaspoon ube extract for color
  • 1 parbaked pie crust

Instructions
 

  • Preheat oven to 375°F.
  • Mix together grated ube, condensed milk, and eggs. When well mixed, add pumpkin pie spicesalt, and a dash of ube extract for color. Feel free to add the ube extract slowly until you reach your desired color.
  • Pour the mixture into your par-baked pie crust and place in oven. Bake for 55-60 minutes
  • Remove from oven and let cool. Serve and enjoy!
