Kimchi Egg Musubi

Ingredients
  

  • 2 large eggs
  • about ¼ cup kimchi
  • shortgrain white rice cooked
  • 1 sheet nori

Instructions
 

  • Cook rice
  • In a small oiled frying pan, cook eggs over easy.
  • Using one full sheet of nori, place a thin square of rice in a diamond offset from the nori.
  • Add a layer of kimchi then the fried egg then finally one more layer of rice.
  • Wrap up by bringing the corners of the nori to the center.
  • Wrap in plastic wrap and slice to maintain a gorgeous onigirazu
