Tuna Fishcake Handrolls

My sister came over with some ideas for easy meals loaded with protein. She is a Personal Trainer so her clients are always asking her for food ideas that are high in protein but something more delicious than just boiled chicken.

When I asked my sister for some easy ways to increase my protein intake, she came up with this Tuna and Fishcake Handroll recipe! We decided we would love to share this super simple yet tasty recipe with the world. The best part is there is hardly any prep so it can be served within 10 minutes (assuming your rice is already cooked).

Ingredients

  • 1 can of tuna
  • kewpie mayo, to taste
  • fried fish cake, 2 sheets per roll
  • cooked white rice
  • japanese pickled radish
  • eel sauce
  • nori for sushi/rolling
  • salt, to taste

Directions

1. Cook white rice.

2. In a medium bowl, empty the can of tuna. Then add kewpie mayo, salt and the pickled radish. Mash with a fork until evenly mixed.

3. The fried fish cake usually comes frozen but defrosts quickly. You can heat these in an oiled pan to fry a bit or to defrost but this step isn’t absolutely necessary

4. Spread a thin layer of rice over the entirety of 1 sheet of nori. On one end, place a sheet of fish cake followed by a layer of tuna mixture, ending with one more sheet of fish cake.

5. Roll it up and slice. Top with eel sauce. Serve and enjoy!
